Rhubarb Slush – The Perfect Summer Refreshment
If you are looking for a sweet, refreshing, ice-cold beverage, look no further. Rhubarb slush is a great treat for the entire family, and it only takes a few simple ingredients to make it. If you use frozen rhubarb, it can even be made year-round. I once used this recipe for my son’s graduation party, and it was definitely a big hit!
Ingredients
8 cups chopped rhubarb (Fresh or frozen)
8 cups (2 quarts) water
3 cups sugar
¼ cup lemon juice
3-ounce package of strawberry jello (or 0.3 ounces if you use sugar-free)
Note: I like to use sugar-free jello mix since there is already enough sugar in the slush
Sprite or other lemon-lime beverage
Directions
1. Cook the rhubarb, water, and sugar in a large pan on the stovetop over medium-high heat. Cook until the rhubarb is tender and falling apart.
2. Using a colander over an ice cream pail (or similar-sized container), strain out the rhubarb strands, collecting the liquid in the ice cream pail.
3. Next, add the lemon juice and the red jello mix. Stir. Allow the liquid mixture to cool stirring every so often so the jello does not separate out of the liquid.
4. Once the liquid is cooled down enough, place the ice-cream pail in the freezer and allow the mixture to freeze. You can stir the liquid every couple of hours as it starts to freeze if desired.
5. You can store the slush in the freezer until ready to serve. Remove from freezer a few minutes before serving.
6. To serve: Scoop the slush into the glass cup of your choice, using an ice-cream scoop or other utensil. The slush will be hard.
7. Pour Sprite or similar beverage over the top of the slush. Serve with a spoon (allowing people to stir the Sprite into their rhubarb slush.
